Birthday Cake Ice Cream Sandwiches take cake and ice cream to a whole new level! |
These Birthday Cake Ice Cream Sandwiches are the whole package. The flavor of vanilla cake speckled with sprinkles, beautifully swirly ice cream sandwiched in the middle, and no utensils or plates required. They're also wonderfully fun and spectacularly celebratory. Oh, and they're super easy to make. That's a win, win, and triple win in my book!
I used a rainbow chip cake mix to whip up the cookies and filled them with vanilla strawberry swirl ice cream.
Start by baking up your cookies. I used a couple of eggs and a splash of oil to make the cookie batter.
Once your cookies have cooled completely, set your ice cream on the counter for 10 to 15 minutes. I used a 1/4 cup ice cream scoop (you can see the one I own below) and smashed each scoop between to pieces of wax paper to flatten it out a bit.
Insert the ice cream disc between two cookies, gently push down a little, and wipe the edges smooth with a butter knife or your fingers. I found fingers worked just fine for this.
Place each ice cream sandwich in your freezer as you complete them. I had a tray sitting in my freezer.

P.S. It doesn't have to be anyone's actual birthday to make these fun and easy treats. Any un-birthday will do just fine. 😉
Birthday Cake Ice Cream Sandwiches
(makes about a dozen ice cream sandwiches)
INGREDIENTS
1 box rainbow chip cake mix
2 large eggs
1/3 cup vegetable oil
about 3 cups of ice cream (I used vanilla strawberry swirl)
DIRECTIONS
1. Preheat oven to 350 degrees.
2. In a medium bowl, whisk together the eggs and oil. Add the cake mix and mix until all combined.
3. Scoop 2 Tbsp of dough about an inch apart (I used my handy dandy cookie scoop. See my Amazon picks below.) and bake for 8 to 10 minutes (9 minutes was just perfect in my oven).
4. Cool cookies on baking sheet for a few minutes before transferring to a wire rack to cool completely.
5. Take out your ice cream and leave it on the counter for 10 to 15 minutes to soften up a little.
6. Scoop a 1/4 cup portion and flatten into a 1/2 inch disc (you don't have to be exact) between two pieces of wax or parchment paper.
7. Place the disc in between two cookies, press together gently, and smooth the edges with a butter knife or with your finger. Immediately place in the freezer and make the next sandwich until you've used up all the cookies. Sandwich cookies should be set in about 2 hours.
8. Take sandwiches out and leave on the counter for a few minutes before serving.
