Toasted Almond Bark

I have to admit, I am way behind on all things holiday. Until this week, putting up our Christmas tree was as far as I had gotten. Now that we're on break from our regular homeschooling routine, I'm huff'n to catch up. Enter, our favorite Christmas candy - Toasted Almond Bark.

This Christmas treat is a clear sign for our household that the holidays have arrived, and it's super easy to put together. Tons (and I mean tons) of toasted almonds get gently pressed into swirled dark and white chocolate. It still amazes me how something so simple and easy to make can be so gosh darn delicious!

The key to this bark is to load it with nuts. Start by toasting about 2 cups of almonds for 7 to 10 minutes in the oven. Then roughly chop those babies up. You may recall that we're a bit nut crazy in this house. 😜

Melt your dark and white chocolate in separate bowls and then pour them onto a parchment lined baking sheet. Use a butter knife to gently swirl them together. Ah, chocolate.

Sprinkle on as many nuts as you possible can and gently push them into the chocolate a little.

After your chocolate has set, break the bark into gorgeous shards. You will lose some of the nuts and that's okay. They make a perfect ice cream topper. 😉

TOASTED ALMOND BARK

INGREDIENTS
10 oz package dark chocolate chips
8 oz of good baking white chocolate
2 healthy cups whole almonds

DIRECTIONS
1. Preheat oven to 350 degrees and line a baking sheet with foil for easy clean up. Spread nuts evenly on sheet and bake 7 to 10 minutes until toasted.
2. Let nuts cool and then roughly chop.
3. Line another baking sheet (or the same one, but cooled) with parchment paper.
4. Place dark chocolate and white chocolate into two separate microwave safe bowls. Microwave each for about a minute and stir. Keep microwaving at 20 second intervals until all the chocolate is melted, stirring after each time.
5. Pour dark chocolate onto prepared pan and spread out a little less than a 1/4 inch thick.
6. Drizzle the white chocolate on top and use a butter knife to swirl them together.
7. Sprinkle the top of the chocolate with as many chopped nuts as you can fit and gently push them into the chocolate a little.
8. Set at room temperature, or in the fridge, until completely hardened. Then break into shards with your hands.
