It's an easy prep and easy clean up kinda meal. The whole meal gets roasted together in one pan.

I like to line my sheet pan with foil for easy clean up. After I sprayed the foil with oil spray, I lay down two packages of brats (these kids can eat their sausage). The onions get quartered and roast in chunks so as not to burn. The golden potatoes get quartered if they're big, and cut into three pieces if they're small. Then I toss them with olive oil and a generous sprinkling of salt and pepper.
All that wonderfulness gets roasted at a really high temp for 30 minutes. Then I turn over the sausages and roast another 10 minutes. If your oven runs hot (which mine does) you may not need the full last 10 minutes.
Carry the sheet pan to your table, place on a hot plate, and serve up the grub. My kids just stab their own sausages over to their plates with their forks. I serve this meal with whole grain mustard, our favorite Homemade Sauerkraut (we just have to have sauerkraut), and ketchup for the kiddos.

Sheet Pan Brats & Potatoes
INGREDIENTS
olive oil spray
2 packages brats
1 large white or yellow onion
2 lbs golden potatoes, washed and dried
olive oil to coat
salt and fresh ground pepper to taste
sauerkraut, mustard, and ketchup for serving
DIRECTIONS
1. Preheat oven to 450 degrees.
2. Line a large sheet pan with foil and spray with olive oil spray.
3. Place sausages on pan.
4. Quarter your onion, spray both sides of each chunk with oil spray and sprinkle with salt and pepper. Nestle chunks gently onto your pan making sure the layers of each chunk stay together.
5. Quarter large potatoes, and cut smaller potatoes into three pieces. Pat dry and toss in a medium bowl with a drizzle of olive oil and a generous amount of salt and pepper. Toss to coat.
6. Nestle potatoes onto your pan.
7. Roast for 30 minutes.
8. Turn sausages over, and roast another 10 minutes.
