Red Velvet Pudding Pie

My poor heart shaped pan. It gets so little use. Sure, it gets to hold the occasional Valentine's Day heart shaped cake, but what kinda life is that? I thought I'd get it out for one more go before it's time to put away all the heart stuff and move on to Easter eggs. So, I put a pudding pie into it.

Make a Red Velvet Pudding Pie to put that heart shaped pan to good use.

A Red Velvet Pudding Pie, that is! This pie is super easy to make. A chocolate cookie crust gets filled with red velvet pudding, drizzled with hot fudge right from the jar, and topped off with puffs of Cool Whip and pretty valentine sprinkles.

I zapped some chocolate cookies in my food processor to make fine crumbs. I used chocolate cream filled sandwich cookies.

Mix those up with a little melted butter and press into your heart shaped pan. Then bake for 8 minutes.

After your crust has cooled, whip up the pudding and pour into your crust.

Drizzle a little bit of hot fudge all over the top, pipe pretty puffs of Cool Whip around the rim, and sprinkle with your favorite valentine sprinkles.

So easy, so pretty and fun, and so creamy and delicious! Happy Valentine's Day y'all!

Red Velvet Pudding Pie

INGREDIENTS
1 1/2 cups chocolate cookie crumbs (about 14 sandwich cookies)
3 Tbsp melted butter
2 3.4 oz boxes Jello red velvet pudding mix
2 1/2 cups whole milk
1 8 oz tub Cool Whip, thawed
1/4 cup hot fudge, room temperature (I like Mrs. Richardson's)
a handful of valentine sprinkles to decorate

DIRECTIONS
1. Preheat oven to 350 degrees.
2. In a food processor zap your cookies until they turn into fine crumbs. You want a total of 1 1/2 cups. Mix with melted butter, and press into your heart shaped pan.
3. Bake for 8 minutes. Cool completely.
4. Whisk together 2 boxes of red velvet pudding with the milk, pour into crust, and spread evenly. Refrigerate for 4 hours or until set.
5. Spoon room temperature hot fudge into a Ziploc freezer bag, snip 1/8 of an inch off of one corner, and squeeze all over the top of your pie.
6. Pipe puffs of Cool Whip around the rim of your pie and sprinkle with valentine sprinkles.

*I like to pipe the rest of the Cool Whip into a pretty dish and serve it alongside my pie.
