Blueberry Lemonade Popsicles

We're still settling into our new home even though it's been a year since we moved. New community, new climate... . It takes a while, and I'm all about giving myself and my family all the time and space we need to adjust. Blogging, I'm afraid, has taken a back seat to the scramblings of every day life in our new place. That said, I just had to carve out a few moments to practice taking blog photos in our new home (I am way rusty) and bring you our favorite summer popsicle.

These Blueberry Lemonade Popsicles are everything you want in a summer treat. Fresh blueberries - tart and sweet. Juicy fresh lemon adding just the perfect amount of pucker. Goodness, my mouth is watering already. Let's get started.

This recipe makes about 7 medium popsicles. I usually double the batch as these babies are quite crave-able around this house.

I use my high speed blender to puree 2 cups of blueberries, the zest of a lemon and the juice of two, a generous splash of pure maple syrup, and some water for good measure.

You wanna blend the mixture for several minutes until it turns a deep dark purple/burgundy color. We're looking to coax out as much of that blueberry goodness as possible. 😋

Strain the mixture (this is the only annoying part, but so worth it) and fill your popsicle molds. I like straining the mixture into a spouted container (like the pyrex above) to make it easier to fill my popsicle molds.

I use these simple dollar store molds. You can also use small paper cups and popsicle sticks in a pinch.

These Blueberry Lemonade Popsicles will bring smiles to your favorite little faces.


After about 4 hours the popsicles should be frozen solid. Then it's time to unmold, serve 'em up, and put some smiles on all those lovable faces in your house.

Blueberry Lemonade Popsicles
(makes about 7 medium popsicles)

INGREDIENTS
2 cups fresh blueberries (two 6 oz packs)
2 large lemons (zest of one, juice of both)
1/3 cup pure maple syrup
1 cup water

DIRECTIONS
1. Dump all of the ingredients in a high speed blender and blend 3 to 7 minutes until the mixture is good and dark and sporting a deep purple/burgundy hue.
2. Strain the mixture through a fine mesh strainer.
3. Pour into your favorite popsicle molds and freeze for 4 hours or until solid.

* This recipe is easily doubled.
