Blueberry Lemonade Popsicles

We're still settling into our new home even though it's been a year since we moved. New community, new climate... . It takes a while, and I'm all about giving myself and my family all the time and space we need to adjust. Blogging, I'm afraid, has taken a back seat to the scramblings of every day life in our new place. That said, I just had to carve out a few moments to practice taking blog photos in our new home (I am way rusty) and bring you our favorite summer popsicle.

Matcha Green Tea Raspberry Popsicles

Anybody else bothered by the fact that the world around us is trying to snuff out summer before its time? Every year I feel more and more cheated as school starts earlier, fall merchandise takes over stores, and pumpkin recipes start to come out of the woodwork (sigh).

I'm not done with summer, folks, and I'm not ready to give in to candy corn quite yet. On top of that, it's still stink'n hot here where I live. With that in mind, let's fight fire with fire and yet another popsicle recipe. Take a hike pumpkins. It's not your turn yet.





These Matcha Raspberry Popsicles are the perfect snack to take a stand against fall madness and continue to enjoy the end of a fabulous summer. They are just the right amount of sweet, creamy, and fruity. The addition of matcha powder adds a beautiful earthy green tea flavor that you've gotta try. Think, green tea latte with a luscious fresh raspberry swirl.



I simply added matcha green tea powder to the coconut cream mixture I like to use for popsicles.



Then I swirled in some homemade raspberry jam in the middle.





The popsicles get topped off with more matcha coconut cream and swirled again.


The green tea flavor really comes through in these pretty popsicles and melds perfectly with the gorgeous raspberry swirl - a match made in heaven. Or should I say, a matcha made in heaven. 😉


















Matcha & Raspberry Popsicles
Makes about 8 medium popsicles

INGREDIENTS
2 cans coconut cream
1/2 Tbsp matcha green tea powder
1/4 cup sugar
2 tsp vanilla extract
1 half pint jar raspberry jam (I used homemade using this recipe)

DIRECTIONS
1. In a high speed blender combine the coconut cream, matcha powder, sugar, and vanilla. Blend until smooth and all flecks of matcha are incorporated.
2. Pour matcha mixture into popsicle molds about 1/3 of the way up. Freeze for about an hour.
3. Add 1 Tbsp raspberry jam to each popsicle mold and gently swirl into matcha layer with a butter knife.
4. Top off each pop with your matcha mixture and gently swirl again through all three layers.
5. Freeze 4 hours or until completely frozen.

Strawberry Lemonade Popsicles

Nothin' says summer like a glass of strawberry lemonade. Even better than that, try these Strawberry Lemonade Popsicles.

These pops are the perfect summertime treat. They kinda taste like a pink Starburst candy - only better and fresher. These pops are sweet and tart and fruity and the prettiest strawberry pink color.

You'll need the zest of one lemon and the juice of three. Also, hull and halve a cup and a half of strawberries.

Throw your fruit, juice, and zest in a high speed blender with some sugar and water. After blending, give it a taste and add in more water or berries until you like the flavor.

Freeze your pops for about 4 hours or until completely frozen. Just a head's up, it will be hard to wait. 😉

Strawberry Lemonade Popsicles
Makes 8 to 10 medium popsicles

INGREDIENTS
3 large lemons
1 1/2 to 2 cups halved strawberries
1/2 cup sugar
About 2 cups water

DIRECTIONS
1. Zest one lemon and juice them all.
2. Pour strained lemon juice, lemon zest, strawberries, sugar, and 1 cup of water into a high speed blender and blend on low until the strawberries are broken down.
3. Increase blender speed to high and blend until you can no longer see flecks of lemon zest and mixture is smooth. Taste and add in more water to taste. I ended up using about 2 cups total. You can also add in more berries.
4. Pour into popsicle molds. Mixture may separate. That's okay.
5. Freeze for 4 hours or until completely solid.

Chocolate Mint Vegan Fudgesicles

Things are heat'n up, but we're keep'n it cool with batch after batch of homemade popsicles. Even Nora holds and eats her own popsicle now. We just can't stop with the popsicles over here. I think I may have recently made the same statement regarding nachos. Life is all popsicles and nachos up in here. Ha!



These fudgy lovelies are soooooooooooooooo chocolatey with a hint of mint that make them super refreshing. Yum, Yum!





They're also very easy to make. 

Coconut cream and milk get whisked together with cocoa powder, sugar, vanilla, and mint extract. Easy peasy lemon squeezy - or chocolate squeezy, in this case.




You need to put a little muscle power into whisking the mixture together so that all of the cocoa powder gets incorporated. You can also use a blender if you don't mind washing it out.


I like to pour my mixture into a pitcher or container with a spout for easy pouring and filling.








Also, be prepared for the smell of chocolate and mint to fill the air sending family members poking their heads into the kitchen to see what's up. 😉



Freeze these pops for 4 hours or until completely frozen.

Chocolate Mint Vegan Fudgesicles

INGREDIENTS
1 can coconut cream
1 can coconut milk
3/4 cup cocoa powder
1 tsp vanilla extract
1/2 tsp peppermint extract
a dash of salt
3/4 to 1 cup granulated sugar

DIRECTIONS
1. Whisk together all of the ingredients starting with 3/4 cup of sugar in a large bowl until cocoa powder is completely incorporated. You can also use a blender.
2. Taste and add in more sugar if you like.
3. Pour into popsicle molds and freeze 4 hours or until completely firm.

All Natural Rainbow Fresh Fruit Popsicles

It's popsicle season y'all. We recently made some rainbow popsicles with layers of fresh pureed fruit. We've been trying to keep things a little more natural and a little lower in sugar too.

This recipe takes a little more effort than I'm used to putting into a popsicle recipe, but when your little guy asks for this healthy treat with all the enthusiasm his heart can muster; well, what can you do?



You'll need about 1 1/2 cups of 5 different types of fruit. We chose strawberries for the red, blackberries for the purple, Cuties for the orange, pineapple for the yellow, and kiwis for the green. There's no natural way to make a true blue layer. If you come up with one, please let me know. You could end up being the super hero of many a household.



I used an immersion blender to puree my fruit. I didn't want to use a whole big blender for so many different small batches. That little machine got quite the workout, let me tell you. Some of the fruit is harder to break down that way, but with a little elbow grease, and some stubbornness on my part, I got the job done without totally overheating my little machine.



You can strain your purees if you don't like seeds. I hate straining things, so I didn't, but I highly recommend straining the blackberry puree, or using blueberries instead. 

I also had some honey and fresh lemon juice on hand to enhance the flavor of each puree if it needed it. I ended up sweetening all the layers, except for the blackberry, with a little squirt of honey. Only the Cuties needed a teaspoon of lemon juice to make the flavor really pop. Just taste each puree and add sweetener or lemon juice, a teaspoon at a time, until you like the flavor.



Drop a heaping tablespoon of your first layer and freeze for 30 minutes. Repeat with each fruit puree to make your layers and then freeze at least 4 hours until completely frozen.


Any leftover puree can be frozen in ice cube trays to throw into smoothies or cocktails.







Rainbow Fresh Fruit Popsicles
Makes about 8 medium popsicles

INGREDIENTS
1 1/2 cups sliced strawberries
1 1/2 cups blackberries or blueberries
1 1/2 cup chopped fresh pineapple
1 1/2 cups segmented Cuties
1 1/2 cups chopped kiwis
honey to taste
fresh lemon juice to taste

DIRECTIONS
1. Use a blender or immersion blender to process each kind of fruit into a puree. As you process each batch, taste, and add in honey and/or lemon juice a teaspoon at a time to get the flavor you want. Strain out any seeds, if you like. Keep purees in separate bowls/cups.
2. Drop a heaping tablespoon of your first puree into each popsicle mold and freeze for 30 minutes.
3. Repeat with each puree, freezing for 30 minutes before adding the next layer.
4. Freeze at least 4 hours or until completely frozen.

Strawberry Coconut Creamsicles

Helloooooooooooooooo summer! Let's get our popsicle on!

My kids are popsicle fanatics. I guess all kids are, right? During the warm months (Did I say warm? I meant stink'n hot.) I try to keep a regular supply of homemade pops in the freezer. The boys love making them with me, and love eating them, and love talking about them... . Like I said, fanatics.

Ezra recently saw some milk and jam swirled popsicles in one of my food magazines. (He may be turning into a foodie.) He asked if we could make them every day for three days straight. Finally, I had some space to indulge him.


I made up my own recipe of course. I used coconut cream sweetened with a little sugar and vanilla and a jar of my homemade strawberry jam.


First goes a layer of sweetened coconut cream that gets frozen for about an hour.


Next, a layer of jam and more coconut cream on top.

We gently swirled the jam through all three layers. Next time I'll swirl it more thoroughly so all the jam isn't so concentrated in one section.

You can use any leftover sweetened coconut cream in your coffee or tea the next morning. That'll make for one happy morning.


These creamsicles require a couple more steps than the basic fruit popsicles I usually make, but they are well worth the extra effort. Just ask this girl.


Strawberry Coconut Creamsicles
(This recipe will make 8 to 10 medium popsicles)

INGREDIENTS
2 cans coconut cream (you can use coconut milk, but the pops may end up more icy and less creamy)
4 Tbsp sugar
2 tsp vanilla extract
1 half pint jar homemade strawberry jam (Here's my recipe)

DIRECTIONS
1. Whisk together the coconut cream, sugar, and vanilla.
2. Pour the mixture into your popsicle molds 1/3 of the way up each mold. Freeze for about an hour.
3. Add 1 tablespoon of jam to each popsicle and top off with more coconut cream.
4. Use a knife to gently swirl through all three layers.
5. Freeze about 4 hours or until completely firm.
6. Thoroughly enjoy! Do not skip this step.

Fresh Orange Popsicles

My sister-in-law brought us a big bag of homegrown oranges recently. What a treat. My kids are fruit fanatics and this bag of bright, fragrant oranges was just what we needed for some popsicle inspiration. Ever since I learned how to make popsicles the right way from Alana Chernila in her cookbook, The Homemade Kitchen, we have had a lot of fun experimenting with different fruit and yogurt combinations.

These oranges were very sweet so we didn't need to add any additional sweetener. We ended up making two batches of these vitamin C packed popsicles. The boys helped to peel while I zested. I made them pause as I took pictures along the way, which they did not like. Maybe not the best time to practice blog photography.

You'll need a zester, popsicle molds, and a high speed blender. You could omit the zest, but it really boosts the orange flavor. A food processor may work in place of a blender.

Fresh Orange Popsicles
(This recipe makes about 12 medium sized popsicles)

INGREDIENTS
8 to 10 oranges

DIRECTIONS
1. Zest 2 of the oranges.
2. Peel all of the oranges and fill a high speed blender to the max fill line with the fruit.
3. Add the zest and zap on low to blend up the fruit. Then move up to high and blend for a couple of minutes until frothy and you can't see little flecks of zest anymore.
4. Pour into popsicle molds and freeze 3 to 4 hours or until solid.
